  1. Begin by hulling the green beans, taking care to wash them well beforehand. Then steam them for 10 minutes or cook them in a pot of boiling water for another 10 minutes.
  2. Trim a few thin slices of courgette. Spread them on a plate, with a little lemon juice. This preparation will be used to form bundles of green beans.
  3. Trim the herbs: 1 small bunch of parsley, 1 small bunch of chives, set aside.
  4. Trim the 2 shallots and the 2 cloves of garlic.
  5. Form bundles of green beans surrounded by the zucchini leaves. Use a wooden pick to hold it all together.
  6. In a frying pan with a little olive oil, add the herbs, garlic and shallot.
  7. Leave to colour for 2 minutes then gently add the bundles. Leave to leather for 2 minutes on each side.
  8. Remove the bundles and arrange them on a plate.
  9. Deglaze the herbs with a little soy sauce and pour over the bundles.
